Hate vegetables? Try this.


Buy a head of Cauliflower. Cut off the leaves and cut the "stem" off. Slice like a loaf of bread into 5/8" slices. Line a baking sheet with parchment paper.
Preheat the oven to 350 degrees. Place cauliflower slices in a single layer on he parchment paper. Brush with reduced calorie butter spread that you have melted in your microwave oven. Sprinkle with salt & pepper. Place in the oven for 20 minutes. Turn over slices. Bake another 20 minutes. In the meantime, mix 3/4 cup breadcrumbs with 1 tbs of the melted butter spread, & 1/4 tsp salt. In a separate baking dish, in a shallow layer, bake these bread crumbs alongside the cauliflower, until golden brown. When the breadcrumbs are done, the Cauliflower is done. Remove both from oven. Chop some fresh parsley, mix in with the breadcrumbs, sprinkle bread crumbs over Cauliflower and serve. Your guests will lick the serving bowl clean.
